A lean and flavorful stir-fry that’s quick to make and loaded with colorful vegetables. Great for a weeknight dinner when you need something fast and healthy.

Ingredients:

  • 200g lean ground turkey

  • 1 tbsp olive oil

  • 1 bell pepper (any color), sliced

  • 1/2 onion, sliced

  • 1 cup broccoli florets

  • 2 cloves garlic, minced

  • 1 tbsp low-sodium soy sauce (or tamari)

  • 1 tsp sriracha (adjust to taste)

  • 1/2 tsp grated fresh ginger

  • Optional: Brown rice or quinoa for serving

Instructions:

  1. Heat olive oil in a large pan or wok over medium-high heat.

  2. Add ground turkey and cook, breaking it apart, until browned and cooked through. Drain any excess fat.

  3. Add bell pepper, onion, broccoli, and minced garlic to the pan. Stir-fry for 5-7 minutes until vegetables are tender-crisp.

  4. In a small bowl, whisk together soy sauce, sriracha, and ginger.

  5. Pour sauce over the turkey and vegetables, tossing to coat. Cook for another 1-2 minutes until heated through.

  6. Serve hot, optionally over brown rice or quinoa.
