A vibrant, hearty, and plant-based salad that requires no cooking. It’s perfect for meal prep or a quick, satisfying lunch.

Ingredients:

  • 1 can (400g) chickpeas, rinsed and drained

  • 1/2 cup cucumber, diced

  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup red onion, finely diced

  • 1/4 cup fresh parsley, chopped

  • 2 tbsp Kalamata olives, sliced

  • Dressing: 2 tbsp olive oil, 1 tbsp red wine vinegar, 1 tsp dried oregano, salt, and pepper to taste.

Instructions:

  1. In a medium bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, parsley, and olives.

  2. In a small bowl, whisk together dressing ingredients until well combined.

  3. Pour dressing over the salad and toss gently to coat.

  4. Serve immediately or chill for later.
