A comforting, fiber-rich, and protein-packed soup that's incredibly satisfying. Perfect for meal prepping and freezing for later.

Ingredients:

  • 1 tbsp olive oil

  • 1 onion, chopped

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • 2 cloves garlic, minced

  • 1 cup brown or green lentils, rinsed

  • 4 cups vegetable broth

  • 1 can (400g) crushed tomatoes

  • 1 tsp dried thyme

  • 1/2 tsp dried rosemary

  • Salt and black pepper to taste

  • Optional: Fresh parsley for garnish

Instructions:

  1. Heat olive oil in a large pot or Dutch oven over medium heat.

  2. Add onion, carrots, and celery. Sauté for 5-7 minutes until softened.

  3. Stir in minced garlic, thyme, and rosemary, and cook for 1 minute until fragrant.

  4. Add rinsed lentils, vegetable broth, and crushed tomatoes. Stir well.

  5. Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes, or until lentils are tender.

  6. Season with salt and pepper to taste.

  7. Serve hot, garnished with fresh parsley if desired.
