A comforting, fiber-rich, and protein-packed soup that's incredibly satisfying. Perfect for meal prepping and freezing for later.
Ingredients:
1 tbsp olive oil
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
2 cloves garlic, minced
1 cup brown or green lentils, rinsed
4 cups vegetable broth
1 can (400g) crushed tomatoes
1 tsp dried thyme
1/2 tsp dried rosemary
Salt and black pepper to taste
Optional: Fresh parsley for garnish
Instructions:
Heat olive oil in a large pot or Dutch oven over medium heat.
Add onion, carrots, and celery. Sauté for 5-7 minutes until softened.
Stir in minced garlic, thyme, and rosemary, and cook for 1 minute until fragrant.
Add rinsed lentils, vegetable broth, and crushed tomatoes. Stir well.
Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes, or until lentils are tender.
Season with salt and pepper to taste.
Serve hot, garnished with fresh parsley if desired.
