A vibrant and nutrient-packed bowl, perfect for a quick lunch or light dinner. It's high in protein and healthy fats, keeping you full and energized.

Ingredients:

  • 1 cup cooked quinoa

  • 150g grilled chicken breast, sliced (or chickpeas for vegetarian)

  • 1/2 avocado, sliced

  • 1 cup mixed greens (spinach, kale)

  • 1/2 cup steamed broccoli florets

  • 1/4 cup cucumber, diced

  • 2 tbsp pumpkin seeds

  • Dressing: 2 tbsp olive oil, 1 tbsp lemon juice, 1 tsp Dijon mustard, salt, and pepper to taste.

Instructions:

  1. In a large bowl, combine quinoa, sliced chicken (or chickpeas), avocado, mixed greens, broccoli, and cucumber.

  2. Whisk together dressing ingredients.

  3. Drizzle dressing over the bowl and toss gently to combine.

  4. Sprinkle with pumpkin seeds before serving.
