A quick, satisfying, and protein-packed breakfast or brunch option that's easy to customize with your favorite vegetables.

Ingredients:

  • 2 large eggs

  • 1/4 cup cottage cheese (low-fat recommended)

  • 1/4 cup diced bell pepper

  • 1/4 cup chopped spinach

  • 1 tbsp olive oil or cooking spray

  • Salt and black pepper to taste

  • Optional: Pinch of red pepper flakes

Instructions:

  1. Heat olive oil or spray a non-stick pan over medium heat.

  2. Add diced bell pepper and sauté for 2-3 minutes until slightly softened. Add spinach and cook until wilted.

  3. In a bowl, whisk eggs with cottage cheese, salt, and pepper (and red pepper flakes, if using).

  4. Pour egg mixture into the pan with the vegetables.

  5. Cook, stirring gently, until eggs are set and scrambled to your liking.

  6. Serve immediately.
