A comforting and balanced meal featuring tender baked chicken and sweet potatoes, offering complex carbs and lean protein.
Ingredients:
2 boneless, skinless chicken thighs or breasts (approx. 150g each)
1 medium sweet potato, peeled and cubed
1 tbsp olive oil
1 tsp smoked paprika
1/2 tsp garlic powder
Salt and black pepper to taste
1 cup steamed green beans (for serving)
Instructions:
Preheat oven to 200°C (400°F).
On a baking sheet, toss sweet potato cubes with 1/2 tbsp olive oil, salt, pepper, and garlic powder. Spread in a single layer.
In a separate bowl, toss chicken with remaining 1/2 tbsp olive oil, salt, pepper, and smoked paprika.
Place chicken on the same baking sheet as sweet potatoes.
Bake for 20-25 minutes, flipping sweet potatoes halfway, until chicken is cooked through and sweet potatoes are tender and slightly caramelized.
Serve chicken and sweet potatoes with a side of steamed green beans.
