A comforting and balanced meal featuring tender baked chicken and sweet potatoes, offering complex carbs and lean protein.

Ingredients:

  • 2 boneless, skinless chicken thighs or breasts (approx. 150g each)

  • 1 medium sweet potato, peeled and cubed

  • 1 tbsp olive oil

  • 1 tsp smoked paprika

  • 1/2 tsp garlic powder

  • Salt and black pepper to taste

  • 1 cup steamed green beans (for serving)

Instructions:

  1. Preheat oven to 200°C (400°F).

  2. On a baking sheet, toss sweet potato cubes with 1/2 tbsp olive oil, salt, pepper, and garlic powder. Spread in a single layer.

  3. In a separate bowl, toss chicken with remaining 1/2 tbsp olive oil, salt, pepper, and smoked paprika.

  4. Place chicken on the same baking sheet as sweet potatoes.

  5. Bake for 20-25 minutes, flipping sweet potatoes halfway, until chicken is cooked through and sweet potatoes are tender and slightly caramelized.

  6. Serve chicken and sweet potatoes with a side of steamed green beans.
